Half of a day here is underground and the other half is on an exposed ridge at 605 metres, and the weather only matters to one of them. Rain costs you the walk; heat costs you the climb. Match the month to the kind of montepulciano walking tour you want before you book.
A cellar is the same temperature in February and in August, so the tastings that are the point of this town are weatherproof. What is not weatherproof is the Corso, which climbs the whole length of the town in the open, and the vineyard rides, which spend four to six hours outside.
Heat is the bigger problem of the two. July and August average highs close to 30 °C, and the climb from the gate to the square is exposed for most of its length. Rain is mostly an autumn business here, and a wet afternoon pushes you into exactly the places — the cellars, the Museo Civico, a kitchen — you probably came for.

Highs average 22.2 °C and lows 11.1 °C, with about 59 mm of rain across the month. Warm days and cool nights, and the wettest of the warm months. Long light makes the terrace worth the wait at the end of the day.
Highs average 26.3 °C and lows 14.8 °C, with about 52 mm of rain across the month. Properly warm. Ride out among the vines early or late, and use the middle of the day for a cellar hour or the museum.
Highs average 29.8 °C and lows 17.4 °C, with about 30 mm of rain across the month. The hottest and by far the driest month. Carry water on the Corso, and expect a guide to move the outdoor part of a day into the morning.
Highs average 29.7 °C and lows 17.4 °C, with about 45 mm of rain across the month. As hot as July with more rain and more people, and the Bravio at the end of it. Anything outdoors is a morning job this month.

Spring and early autumn are the easy answer. From April to June and again in September, the highs sit between 17 and 26 °C, the evenings are long enough to eat outside, and the climb is a walk rather than an effort. September adds the harvest, which is the single best reason to come.
Summer is dry and hot. July takes about 30 mm of rain across the whole month, the least of the year, and its afternoons are the hardest work you will do here. Autumn reverses it: October and November together bring more rain than spring does in three months, and November is the wettest month of all.
Winter is cold at this height rather than severe, with lows near freezing in January and rain rather than snow. The tower is out of season and the museum is shut, but the cellars are open, warm by comparison and nearly empty. See when to visit for what that does to the rest of your day.
Most of what is sold here runs whatever the sky does. The cellar hours, the cooking classes and the coach days are all indoors at the point where it matters, and a wet day changes nothing but the view through the coach window.
The exceptions are the ones that put you outside for hours: the e-bike days, the Vespa day, the horseback ride and both visits to the Cinta Senese farm. Each of those carries a bad-weather clause in the operator's own words — if it is called off for poor weather you are offered another date or a full refund — and the e-bike wine day hands you a waterproof with the bicycle and expects you to use it.
